8 any kind biscuits, finely crushed ………..I used Lotus Biscoff
4 tbsp unsalted butter, melted
9 oz sugar
9oz dark chocolate, broken
450ml (16 fl oz) whipping cream
450g (1 lb) cream cheese
4 eggs, beaten
Chocolate chips, to decorate
Preheat the oven to 190C/. Put the crushed biscuits in a bowl and combine with the butter and 2 oz of the sugar.
Spoon into a 9 ins cake tin and press down firmly. Bake for 15 minutes, remove and allow to cool.
Meanwhile, melt the broken chocolate in a bowl over boiling water, stir in the whipping cream and allow to cool.
In another bowl, beat together the cream cheese and remaining sugar. When soft, slowly stir in the eggs,
then add the chocolate and combine thoroughly. Spoon it over the biscuit base and bake for 1 hr. Cool, then chill in the fridge.
Decorate with chocolate chips and serve.
