Oatmeal-Walnut Raisin Cookies

 

 

 

Hi Divas ,

This recipe very healthy .Give it  a try.

One cup whole wheat flour
Half cup all-purpose flour
One tsp baking soda
One tsp ground cinnamon
Half tsp kosher salt
Half tsp ground nutmeg
One cup (2 sticks) unsalted butter, softened
One cup light brown sugar, packed
Half cup sugar
Two large eggs
One tsp pure vanilla extract
Three cups old-fashioned rolled oats (not quick-cooking)
One cup raisins
One cup chopped walnuts
Half cup dried berries

Preheat oven to 350. Whisk together flours, baking soda, cinnamon, salt, and nutmeg.

With an electric mixer, beat butter and sugar on medium-high speed until fluffy.

Gradually beat in the eggs and the vanilla. Reduce speed and add flour , one cup at a time.

Mix until combined, then add in the oats, nuts, raisins, and the berries (Better to do this part by hand ).

Roll into 1-inch balls and space them 2 inches apart on a cookie sheet.

Bake in 350 degree oven for 12 – 14 minutes, or until slightly golden around the edges.

Cool slightly on cookie sheets. Cookies can be stored in an airtight container at room temperature for up to a week.
