In a separate bowl mix 1/4 cup warm water
1 table spoon sugar
1 table spoon yeast
leave them until they form foam and double in size(the yeast gets a quick wake up call!!)
Second step, in a mixing bowl with a dough attachment mix:
3 cups flour
1 1/2 Tb sour cream
1 large egg
1/4 tea spoon salt
5 table spoon olive oil
add the yeast mixture then add around 1 cup of water or so to have a dough ball attached to the hook .
Transform to an oiled bowl and cover it with plastic wrap and leave it until it double in size( if u r in a hurry, use warm water to have it ready in about an hour)
For spinach pie:
1 bag of spinach
1 large onion
salt to taste
1/2 tea spoon of lemon salt (or juice of 1 large lemon)
1-2 table spoon of mixed kebbe spices( or a mixture of cumin seeds, hot red pepper and some dry mint)
Cut the spinach and the onion, add the rest of the ingredients and drizzle about 5 table spoons of olive oil and the stuffing is ready.
For meat stuffing:
1 pound ground meat
2 large onion
pine nuts (optional)
salt and 7 spices
If using pine nut, saute it with some oil then chop the onion and add it. When it sweat, add the meat and stir using a spoon until no chunks of meat are seen.
You don’t have to fully cook the onion and meat cause they will continue cooing in the oven. add the chopped tomato and season with salt and pepper.
let the stuffing cool down then strain it a little bit( we need some of the juices but not too much)
The rest is to cut and kneed the dough and stuff them then bake in a pre- oiled pan in the oven. When the bottom is brown,
brush the pies with oil and brown them under the broiler for few seconds.You can brush them
with egg white and add some sesame seeds before place them in the oven.
