APPLE CREPES
1 cup flour
1-1/2 cup skim milk
2 egg whites
1 egg
1 tsp oil
Cooking Spray
4 apples
Splenda
1 tbsp butter
whisk together flour, milk, egg whites and oil until smooth. Slice or chop apples. In a large skillet, melt butter over medium high heat. Add apples and sprinkle with splenda. Cook, stirring occasionally, until apples are tender and caramelized.
Heat a separate nonstick pan, spray with cooking spray. Pour 1/4 cup of crepe batter into pan and swirl pan to coat.
When the underside is lightly golden and the top is “dry”, flip crepe over. Cook until lightly golden on underside.
Place 1/6 of the apple mixture in each crepe and roll up. To serve, I dusted mine lightly with powdered sugar and then drizzled very lightly with a bit of caramel ice cream syrup.
