Strawberry Cheesecake

Ingredients

8 ounces cream cheese, softened
1/3 cup sugar
1 cup sour cream
2 teaspoons pure vanilla extract
8 ounces prepared whipped topping, thawed
1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
1 pound fresh strawberries, cut into slices
* Note: whenever possible, try to choose organic strawberries, since they are one crop that is very heavily sprayed with pesticides.
 

Directions

  1. Make a graham cracker crust by combine 1 1/4 cups graham cracker crumbs with 1/4 cup sugar and 1/3 cup melted butter.
  2. Press the mixture into a 9-inch pie plate and bake for 8 minutes in a preheated 350°F oven. Cool completely.
  3. Beat the cream cheese until smooth with an electric mixer.
  4. Gradually beat in the sugar.
  5. Beat in the sour cream and vanilla until just combined.
  6. Fold in the whipped topping.
  7. Scrape mixture into the piecrust.
  8. Chill in the refrigerator for 4 hours.
  9. To decorate, starting in the center, arrange the strawberries in a circular pattern.
