Watermelon Juice

Ingredients

  • 3/4 cup water
  • 1/4 cup sugar
  • 2 tbs  chopped mint leaves
  • 1 tsp  lime zest
  • 1 tsp lemon zest
  • 6 cups cubed, watermelon
  • 1/8 cup  lime juice
  • 1 tbs  lemon juice

Instructions

  1. Combine the water and sugar in a small saucepan; bring to a boil. Cook until the sugar dissolves  and remove from heat.
  2. Add the mint, lemon zest  and lime zest. Let the mixture steep for 20 minutes. Strain through a fine  cheesecloth over a bowl, and discard the solids.
  3. Place the sugar syrup and watermelon in a blender, and process until smooth.
  4. Stir in lime and lemon juice. Refrigerate until ready to serve, or pour over ice if serving immediately.
