- 3/4 cup water
- 1/4 cup sugar
- 2 tbs chopped mint leaves
- 1 tsp lime zest
- 1 tsp lemon zest
- 6 cups cubed, watermelon
- 1/8 cup lime juice
- 1 tbs lemon juice
Instructions
- Combine the water and sugar in a small saucepan; bring to a boil. Cook until the sugar dissolves and remove from heat.
- Add the mint, lemon zest and lime zest. Let the mixture steep for 20 minutes. Strain through a fine cheesecloth over a bowl, and discard the solids.
- Place the sugar syrup and watermelon in a blender, and process until smooth.
- Stir in lime and lemon juice. Refrigerate until ready to serve, or pour over ice if serving immediately.
